Traditional: no yeast (native yeasts), a long fermentation of over 4 months, naturally made malo. Rough filtration on white earth.Hand-operated harvest.

Floral and fruity nose.A very fine minerality, to bring freshness and balance.Preservation: 3 to 5 years
Service temperature: 13°C (45°F).
For the record, « Les Grandes Jorasses » is the name of one of the most mythical races of the Mont-Blanc Mountains.
